Miso Soup

I always thought miso soup was a Japanese soup that is made from a blend of spices. Well, the Dr. Oz Show proved me wrong! It is actually a paste that is produced by fermented soybeans. This was a shocking and exciting revelation to me. I began scouring the internet to figure out where I could buy it and what the benefits were.

  • Miso paste may decrease cholesterol and prevent cancer.
  • It contains living enzymes that aid in healthy digestion, but it is important to never boil the paste, as it will kill the beneficial living enzymes.
  • Contains significant amounts of zinc, manganese, and copper.

I found it at Earth Fare in the refrigerated section.

Miso paste can be made from rice, barley, and chickpeas also. The paste can range in color from light to dark. The lighter the color, the more mellow it will taste while the dark paste will have a more intense flavor.

To make miso soup, boil some water with your choice of vegetables and tofu. Some choices could include:

  • mushrooms
  • carrots
  • wakame
  • scallions
  • cabbage

Remove from heat and let cool for a few minutes.

Add 2 teaspoons of miso paste to your bowl and stir until dissolved.

    • I bought mine a couple of weeks ago and the expiration for it is september 2013!! I would say it should last at least a year. I searched online and some people say it is even good up to 3 years.

    Do you have any tips for using your Iphone to take great pix? I take a lot of pix while out and about in Savannah with my phone but they never look great. I resort to Instagram but I’m kinda getting tired of the look….Thanks again!

    • Thanks for the comment! The majority of my photos on the blog are taken with a Canon 40D, and a few with a Canon Elph point & shoot, and my iPhone. I just got an iPhone about 4 months ago and I’m finding that is really convenient to use instead of lugging a huge camera around, although they do not come out as clear.

      When taking iPhone pix, I use the basic camera and instagram. The more light you have, the better your pic will be…you can tap around the image to change the exposure or make it lighter or darker. The more you zoom or crop an image, the more “grainy” it will look, so I try not to do that. Stabilizing your phone on a table when taking a photo can help the focus not be thrown off. This may be really basic stuff that you already know, but this is what I do.

      I also use the diptic app to create collages. I hope this helps!!!
