I Cried

I cried over cupcakes.

I know! I don’t know what came over me, standing there in the Sweetie Cakes bakery in Lumberton.

I was in my hometown in North Carolina, and Mom and I were there picking up cupcakes for my bridal shower.  She had already told me what she had ordered (and she was soooo excited):

I cried over the sunflower cupcakes because I didn’t expect them and Mom really surprised me.  I thought it was so sweet because my favorite flower is the sunflower and they will also be the flowers in my wedding.  She got me good.  I was quite embarrassed that I cried though.

These cupcakes were insanly good.  I have two favorites:  The Swiss Chocolate with Peanut Butter Buttercream and the Lemon Apricot with Lemonglaze.  The Lemon cupcake was bursting full of tart lemon flavor.  Vee also likes the PB and Lemon cupcakes the best.  Great minds think alike, heh heh.  My Mom’s favorite is the German Chocolate.

The thing about these cupcakes is that the cake part is super moist.  Everyone wanted to know where Mom got them and how much they were.  I’ll be making a pit stop at Sweetie Cakes every time I’m in Lumberton, and you should too!

The shower was lovely.  My soon to be sisters-in-law, Jenny and Christie, put up festive decorations.

My other soon to be sister-in-law, Ellen, made an awesome photo collage of Vee and I over the years.

Vee’s Mom made amazing Filipino food as usual!  Pancit, Fried Rice, and Egg Rolls.  Everyone loves the Egg Rolls.

Games were involved – we all had these clothes pins to wear.  Anyone who said “good” or “wedding” lost their pin to the person who caught them saying those words.  The one who ends up with the most pins, wins a prize.  Aren’t these pins the cutest!!

There was also a game which involved me chewing a piece of Bubble Yum each time I gave a wrong answer to a question about Vee.  Some questions were:

What kind of animal would he want to be?

What is his favorite color?

Who is he named after? etc.,etc.

I think I ended up chewing 8 pieces.  I maybe only got  three answers right (with help).  Who am I marrying??  I apparently don’t know!

And of course, there was fun gifts.

Divine Cupcakes and Yogurt Cafe

Divine Cupcakes and Yogurt Cafe is the new sweet spot in Charlotte.  They had their grand opening October 30th and Vee and I went to check them out.

They offer over 25 different flavors of frozen yogurt and gourmet cupcakes, as well as vegan, gluten-free, and diabetic friendly cupcakes.  Visit their website for a full list of flavors and services.  You can also follow them on Facebook and Twitter to find out which flavors are in rotation for the day.

First up, yogurt!

Divine Yogurt – Lip smackin’ good.

The flavors of the day were Strawberry-Banana, Peach, Vanilla, and Silky Chocolate.  Vee and I sampled the Strawberry-Banana.  It was smooth, creamy, and delish!

There is also a toppings bar.

And now, for the cupcakes!  The cafe is pretty much self-serve.  There will be a wall of boxes to choose from, so you can carry your precious cargo home.

Then to left of the boxes, you will see the bright light that is Divine Cupcakes (sorry, just finished watching the movie, Hereafter).  I’m hoping there are cupcakes like this in heaven.

Cupcake Monsters AHHHHHH!

My two favs were the White Chocolate Cherry and Bitter Dark Chocolate.

Winners

The White Chocolate Cherry is amazing!  The icing is dreamy and you will find huge hunks of real sweet cherries on the inside.  I believe they are giving Ben and Jerry’s Cherry Garcia ice cream a run for their money.

Now, if you are a severe chocoholic (like I am), the Bitter Dark Chocolate is the cupcake for you.  If you are a milk chocolate lover, don’t let the “bitter” part scare you.  It’s rich and full of chocolatey goodness.

My third fav was the Mango Cupcake.

The frosting on this is sooooo good.  I believe it was some type of buttercream frosting, in which, you can’t EVER go wrong with that.

Vee’s top three were the White Chocolate Cherry, Mango, and the Chocolate Pecan.  The Chocolate Pecan is chock full of nuts by the way, for the nut lovers!

I suggest you get thee to the cafe and enjoy a divine treat!

PB & J Cupcakes

PB & J Cupcakes

Well….there really isn’t any Peanut Butter or Jelly in these cupcakes!  I bought blackberries from the Atherton Market Saturday and I’ve been on this Sunflower Butter kick too – so, I was thinking about it last night and BAM, it came to me – why not make them into a cupcake!  As for the name, I just couldn’t see calling them Sunflower Butter and Blackberry Cupcakes.

I followed the Yellow Cake recipe from my Better Homes Cookbook and the Peanut Butter Frosting recipe from my Joy of Cooking Book.  I used Sunflower Butter in place of the Peanut Butter in the Frosting recipe.  For the cake, I added 1 and 3/4 cups of fresh blackberries blended and used half all-purpose flour and half whole wheat flour.  I did, however, use too much butter.  I had double the amount of butter, but I caught it after I had mixed it with the sugar, so I scooped half of it back out and added some more sugar back in – no idea how much.  And then I almost forgot the baking powder!! I also think next time I will strain the blackberries so there isn’t any seeds in the cupcake.  You know how it all gets stuck in your teeth?

I wouldn’t call these amazing, but they are quite interesting.  My favorite part is the frosting and chocolate covered sunflower seeds on top and I also love that they are purple!

In other news, I came across the show Cupcake Wars on Food Network late last night (when I really should have been sleeping.)  Four cupcake bakers battle it out to win $10,000 each week.  In the episode I saw, the bakers had the task of creating three different breakfast cupcakes for a golf tournament.  One baker made a cupcake topped with chopped bacon and strawberries which looked really good!  Watch the premiere Tuesday, June 15th at 10pm.

Curbside Cupcakes

I saw a feature about the company Curbside Cupcakes on CNN News the other day.  They basically drive around in a pink truck and sell cupcakes to the Washington DC area.  I thought “Wow, that’s a really great idea!”  I’ll be stalking them if I’m ever in the DC area.
